Oatmeal Wafer Cookies

Prep Time: 45 minutes
Cooking time: 10 minutes

Ellie's specialty, we get these once a year along with her delicious Snickerdoodle cookies. these delicious paper thin wafers are great on their own, but equally amazing crumpled up on a nice bowl of vanilla ice cream

Ingredients

1     CUP   Quick Oats [not Instant]

1     CUP   Sugar

1ea           large egg [beaten]

3     Tablespoons All-Purpose flour

1/4 Teaspoon  Baking Soda

1     Teaspoon Vanilla Extract

1/2 Teaspoon Salt

1/3 CUP melted butter

Mix well with a slotted spoon the Oats, Sugar, Flour, Salt and Baking Soda

Add in slowly the beaten egg, vanilla and butter and mix in well

​

Let the mix stand for 30 minutes

​

Pre-heat oven to 350F

​

Drop by 1/2 teaspoon onto a parchment paper covered cookie sheet approximately 2 inches apart

​

Bake at 350F for 8-10 minutes

​

Slide parchment paper off sheet onto a cookie rack to cool, when cool the cookies will slide right off

​

Reuse parchment paper and repeat. 

​
